This cannelini beans dish is nourishing, flavorful, and perfect for meal prep. It’s packed with fiber, protein, greens and a little heat from chilli oil.

- 2 to 3 garlic cloves, chopped
- 1/2 onion, chopped
- 2 can cannellini beans, drained and rinsed
- 1/4 cup sun-dried tomatoes, chopped
- 2 tbsp cream cheese
- 1 cup spinach
- 1 to 2 tbsp fresh parsley, chopped
- 1 tbsp chilli oil
- Salt and pepper, to taste
- A little oil
- Splash of water
Steps

Heat a little oil in the pan and sauté the garlic and onions until soft.

Add the sun-dried tomatoes and chili oil, then stir in the cannellini beans.

Season with salt and pepper, then mix in the cream cheese with a splash of water until creamy

Add the spinach and let it wilt

Finish with fresh parsley, mix and serve warm with toast
